1/4 cup app purpose flour
1/4 cup chili powder
3 Tablespoons dried minced onions
1 tablespoon garlic powder
2 1/2 teaspoons salt **
2 teaspoons dried oregano
2 teaspoons ground cumin
1 1/2 teaspoons paprika *
1 teaspoon ground coriander
Combine all ingredients. Store in an airtight container in a cool, dry place for up to 1 year. Yield: about 1 cup.
Use 2 Tablespoons per 1/2 pound of meat.
* For a bit more spice replace the paprika with cayenne pepper..
** To reduce your sodium intake, leave out the salt, or reduce it to 1/4 teaspoon
