1 basic pie crust either homemade or the organic variety
1 pound heirloom tomatoes, cut into 2-inch wedges and deseeded
4 oz shredded mozzarella
3 oz parmesan cheese
1 oz bleu cheese
2 tbsp chopped fresh parsley
2 tbsp chopped fresh basil
cup heavy cream
cup milk
3 eggs
tsp salt
Black pepper to taste

Cooking Instructions

1. Brush the pie crust with a beaten egg and set aside. Preheat the oven to 400 degrees.

2. Arrange the tomatoes in the bottom of the pie crust like you would spokes of a wheel and place the leftovers in the center.

3. Combine all the remaining ingredients and whisk until smooth. Top the quiche with the egg mixture.

4. Bake for 43 to 45 minutes.
