1 pound ground turkey
1 onion, minced
1 tablespoon minced garlic
3 tablespoons parsley, chopped
1/2 cup whole wheat bread crumbs
1 scallion, finely chopped
2 teaspoons fresh thyme
1 teaspoon salt
1/4 teaspoon pepper
3 cups Tomato Sauce (see our own recipe)
1 pound whole-wheat pasta
Preheat oven to 350 degrees F. Blend together raw ground turkey, onion, garlic, parsley, bread crumbs, scallions, thyme, salt and pepper. Mix gently but thoroughly. Using a small scoop or spoon, divide the mixture into 1 tablespoon portions and roll into smooth round balls. Place on a parchment paper-lined baking sheet and cover with plastic wrap. Refrigerate until thoroughly chilled, about 1 hour.
Brush the meatballs with olive oil and bake until browned and cooked through, about
15 to 20 minutes. Let the meatballs cool slightly, and then serve warm with cooked spaghetti and tomato sauce, if desired.
