3 cups flour
1 tsp. cinnamon
1 tsp. soda
1 tsp. salt
2 cups grated carrots
1 cup chopped pecans
2 cups sugar
1 1/4 cup oil
1 can crushed pineapple (8 oz.)
3 eggs, beaten
1 tsp. vanilla
Orange Glaze:
1 cup sugar
1/4 cup cornstarch
1 cup fresh orange juice
2 Tbsp. butter
2 Tbsp. grated orange peel
1 tsp. salt
Mix together flour, cinnamon, soda, salt, carrots and pecans.
Then combine sugar, oil, pineapple, eggs and vanilla and add to
first mixture. Bake in greased and floured tube pan at 350
degrees F for 45 minutes.
For Orange Glaze: Mix sugar and cornstarch in pan. Gradually add
orange juice and stir until smooth. Add butter, orange peel and
salt. Cook over low heat, stirring constantly until thick. Let
glaze cool completely before putting on cake.
