1 2/3 cups water
1 pkg. Stove Top stuffing Savory Herbs Mix
1 1/2 lb. Italian sausage, cut into 2 inch thick slices
1 large green and red pepper, thinly sliced.
1 large onion, sliced.
3 cloves garlic - minced
1 lb penne pasta
1/2 lb mozzarella cheese
1 Cup Parmesan cheese
1 can (15oz) tomato sauce.
Perheat oven to 400 degrees. Add hot water to stuffing mix; stir just moistened. Set aside.
Cook and stir sausage in large skillet on medium-high heat until no longer pink in center; drain. Add peppers and onions; cook until vegetables are crisp-tender, stirring occasionally.Cook penne according to package directions. In large bowl, combine cooked penne, sauce, cheese, 3/4 Cup Parmesan. Spoon into baking dish. Spoon into 13x9 inch baking dish. Cover with prepared stuffing. Sprinkle the remaining Parmesan over the top.
Bake at 350 for about 25 minutes or until heated through.
